Paleo Stuff I Make: Meaty Beanless Chili ›

- 2-3 Tbsp olive oil
- 1 medium carrot, peeled and chopped
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 lb lean ground meat

- 1 6-oz. can tomato paste

Today’s eats
Breakfast- left over green smoothie from yesterday
Snack- banana
Lunch- same salad from dinner last night
Dinner- chicken burgers with bacon and avocado
Dinner tonight is amazing! I made chicken burgers and bacon with avocado. So happy right now.
Combine the following in a large bowl:
1.5 lbs ground chicken
One egg
Handful of unsweetened coconut flakes
2 Tbs Dijon mustard
1 tsp onion powder
1 tsp dried sage
1 Tbs coconut oil, melted
Salt and pepper to taste
After I cooked the bacon (I finished it before dinner was ready since I just couldn’t wait) I cooked the chicken burgers in the drippings. Half an avocado and there you have it. Heaven on a plate. This recipe makes about 6 burgers. It’s also a good idea to slightly undercook the ones you will be reheating for another meal that way they won’t dry out or overcook in the microwave. Enjoy!
