I always find breakfast to be a challenging meal. I have no problem figuring out what to have for snacks, lunch, and dinner, but when It comes to the most important meal of the day, I get stumped. Any one else feel this way? I thought I would make a place to keep track of my good ideas for this meal. I don’t ever advise skipping breakfast, even if you only have a second, at least grab some fruit to go or a granola bar. If you guys have thoughts or ideas PLEASE send them to me via my ask so I can try them and add them to this page! I want this to be a collaborative effort!
Two soft boiled eggs cut up and topped with salt and pepper. You can eat these alone or with half a whole grain slice of toast or an english muffin. I also like a side of fruit (kiwi and bananas go well together)
Oatmeal with fruit (I most commonly top my oatmeal with strawberries, blueberries, or bananas. I always add cinnamon, sometimes unsweetened cocoa powder. Agave nectar is a great and healthy way to sweeten it. I also like to overcook it a bit and water it down with almond or soy milk. You can also add chopped nuts and dried fruit.

fried eggs over easy on top of half of a multi grain english muffin with a side of fresh fruit
non fat pain greek yogurt with some or all of the following: strawberries, blueberries, raspberries (I clearly love my berries) low fat or low sugar granola (I prefer the kind that is sweetened with fruit, not sugar) cinnamon, agave
omelets with mushrooms, bell peppers, basil, tomato, parmesan cheese on top
smoothie with fresh or frozen fruit, spinach, almond milk, peanut butter, and maybe some protein powder depending on what my day is looking like

Egg White & spinach scrambled eggs - feta cheese, egg whites and spinach (torn)
Special K : 1 cup chocolate special k, 1 banana
Van’s Waffles with sugar free syrup, fresh fruit, egg whites
Whole wheat toast with all natural peanut butter, bananas sliced on top
Chocolate Banana Smoothie: 1 cup chocolate silk, 1 banana, ice
Fat free cottage cheese with fruit
Homemade apple sauce (cook apple slices in a little water and cinnamon and mash it up) as a side
Light french toast - dip light whole grain bread in egg beaters that have a little milk mixed in and top with apple sauce or jam
egg white omelettes with mushrooms, bell pepper, onion and salsa!
