My definition of healthy eating means consuming things that are good for you, not just because they are low in fat or sugar or carbs. I believe anything we put in our bodies should have a purpose. I have a lot of experience with this topic and hope that I can help people to reach their own goals as well as reaching my own with the support of my followers. A Reader Recipe: Tilapia Wrap With Mango Salsa and Guacamole

We love this recipe for tilapia wraps from FitSugar reader HealthyDiva because it’s so quick and easy to make. Make each ingredient from scratch or use healthy store-bought alternatives for those times when you’re in a rush.

Tilapia Wrap With Mango Salsa and Guacamole

This is the perfect Summer wrap combo! I bought some mango pico de gallo at the store and knew it would be used well!

Ingredients

Whole Wheat Pita Wrap
Guacamole
Mango Pico De Gallo
Tilapia

Directions

  1. Take a whole wheat pita wrap (or wrap of your choice) and lay flat.
  2. Spread some guacamole on it, then spread some mango pico de gallo on it as well.
  3. You can either cook up a fresh piece of tilapia, or cook up a frozen piece. I used a piece of frozen tilapia piece and microwaved it — Gorton’s has yummy ones!
  4. Add tilapia on top of the guacamole and mango pico de gallo — then wrap it up!

Enjoy! The combo of flavors is yummy!

Here’s What I Ate Today

I haven’t posted one of these in a while! Incase anyone cares, I had:

BREAKFAST~

nonfat greek yogurt with 3 strawberries, 1/2 cup raspberries, pinch of slivered almonds, a little agave

Grande Soy Latte (My bosses treat :)

LUNCH~

Salad from the salad bar by my work. I put spinach, carrots, cabbage, kidney beans, beats, hard boiled eggs, small amount of blue cheese, raisins, and sesame dressing

Gingerberry Kombucha

Slice of baguette 

DINNER~

Chicken puttanesca with orzo pasta and a slice of baguette

Anonymous asked: I had a homemade chicken (white meat) curry that contained coconut cream,onions,tomatoes and some spices with 1 scoop of white rice in dinner time. Is this okay to eat while on diet?

I think its fine to eat like that if you were making good choices all day (salads and lots of fruits and veggies for snacks) Just be aware of the high fat content in coconut milk :) Sounds so yummy though!

I used to get the Sonic Ranch Chicken Wrap all the time! Then I realized it was 450 calories! 17g Total grahms of fat! 45g of carbs! 1305mg Sodium! So I came up with a healthier version that taste surprisingly the same!

Off hand I can’t think of any to link this to but I love to make fresh hummus with chickpeas or you can roast them in the oven with salt, pepper, and a little bit of oil and they get crunchy! I also like to heat some oil in a pan and add white kidney beans, salt, pepper, and fresh chopped rosemary.

1 lb. lean or extra lean ground turkey1/4 C egg whites1/4 C old fashioned oatmeal, first ground in the food processor1/4 t garlic powder1/4 t Mrs. Dash, original
To make a Mediterranean burger simply add:1 C chopped spinach1/4 C FF feta cheese
Combine all ingredients and form into four patties. Grill to your liking. Serve in a Flat Out light sandwich wrap and top with sliced tomatoes, basil, or this lightened up tzatziki sauce:

1 C fat free Fage yogurt1/2 small cucumber1 garlic clove1 T chopped fresh mint1 t dry dill weed1 T white vinegara pinch of salt
Combine all ingredients in a food processor, chill and serve. Feels like summertime!

Learn how to make the salad (and strawberry-coconut water) after the break!
The ingredients listed below will make two servings:
Vegetable Salad
INGREDIENTS
5 small beets, roasted (To roast beets, wrap them in foil and place in a 400 degree oven for 30-35 minutes, until tender.  Let cool and remove skins)
2 roasted red peppers, sliced
1 stalk celery, sliced
10-12 snow peas
1 head romaine lettuce chopped
Candied Walnuts (To make, melt 1 tablespoon butter and 1 tablespoon sugar - or Stevia -  in a pan, on low heat.  Add a handful of walnuts and stir constantly, until coated and sugar is slightly caramelized)
Feta Cheese
- Divide the lettuce and vegetables between two plates.  Cover with walnuts, cheese, and dressing if desired.
- I made a dressing out of a drizzle of black cherry vinegar (any vinegar will work) and olive oil. The vegetables have so much flavor on their own that very little is needed, and could easily be done without.

1 large handful strawberries
2 cups chilled coconut water (or plain filtered water)
1 tablespoon agave nectar
1 handful ice cubes
- Combine all ingredients in a blender, and process until smooth.  Enjoy!
